I know no one has posted for awhile so I thought I would make a post.
I am making red velvet gooey butter cookies. So far they have all turned out well. The taste is just more chocolately than a normal gooey butter. I made these for our groups Valentine’s day bake sale.
Irish Soda Bread! I made this for Thanksgiving to go with my potato soup, and it was delicious. Just use the Working Class Foodies recipe but double the salt, and you’ll be very happy.
So, I definitely just made acorn squash for the first time a few weeks ago, and it was delicious!
Cut your squash into four sections. Remove seeds and stringy inside. Score with a sharp knife. Add a pad of butter into each section. Set into a baking tray with a quarter inch of water on the bottom of the tray so that they stay moist. Bake for one hour at 350 degrees Fahrenheit. Salt and pepper to taste.
2 cups flour
3/4 cup sugar
1 tsp salt
3 tsp baking powder
1 egg (beaten)
3/4 cup milk
1/4 cup coffee
1/4 cup vegetable oil
1 cup chocolate chips
3/4 cup melted Nutella
1. Mix flour, sugar, salt, and baking powder in a bowl.
2. Create a well for the beaten egg, milk, coffee, and oil.
3. Mix together with a fork until lumpy.
4. Melt Nutella in the microwave for 30 seconds.
5. Add Nutella and chocolate chips into batter, folding in.
6. Put in oiled muffin pan, sprinkling extra chocolate chips on top.
7. Bake at 350F for 20 minutes, or until fully cooked (use the toothpick test!).
Optional: Nutella-Butter Topping
Melt 2 parts Nutella with 1 part butter in the microwave until runny. Drizzle onto the muffins and let cool.

It’s fall, which means Harvest Soup time! This one had rice, lentils, yellow squash, cabbage, onion, and potatoes. Then I curried the whole thing because, really, why not? Curry is awesome.
I promised my roommate that I’d make her a cheesecake when she came back from basic. Well, she’s been back from basic for nearly 3 months…
Blah! I wish I had my car here! I could have easily gotten the ingredients and would have made it by now! But luckily my roommates have their cars here! So whenever we run low on food, we’ll eventually go to Walmart! (that’s all there really is here where my university is)
Another thing that’s to be made soon are onigiri! I just found out that my veteran from rugby (much like a Big in a sorority) and I are a lot alike!
But yeah, so hopefully I can remember to take photos when making these!
